Glazed Eggnog Muffins

Whip up a batch of these delicious Glazed Eggnog Muffins. They taste like old fashioned cake DONUTS!!!  They taste even better the next day,….if you have any left! 

Fresh Grated Nutmeg

If you’re able to, opt for freshly grated nutmeg.  The flavor is more intense than ground nutmeg.  Once you try freshly grated, you’ll have to have it that way every time.  Definitely worth it!  

Mixing Eggnog Muffins

Mixing up these muffins take no time at all.  They make a quick breakfast or brunch treat, or Christmas morning breakfast.  I love using my KitchenAid Cordless Hand Mixer for recipes like this.   

Baking Eggnog Muffins

Fill your muffin cups about 2/3 full.  They will puff quite a bit as they bake.  My OXO Muffin Pan works well for muffins.  I like the even browning this pan provides.  See my “shop” page for all my most used kitchen items. 

Eggnog Muffins in the oven

As the muffin bake, you can make the glaze.  Measure all of your ingredients and stir the glaze together right before the muffins come out of the oven.  

Glazing Eggnog Muffins

Dip the tops of warm muffins into the glaze, shake a little, and allow excess to drip back into the pan.  The glaze will firm a little as it cools.  Tastes like an eggnog donut glaze!

Ingredients
  

Muffins:

  • 1/4 c. butter, softened
  • 1/4 c. vegetable oil
  • 1/2 c. sugar
  • 1/3 c. brown sugar, packed
  • 1 tsp. rum extract
  • 2 tsp. vanilla
  • zest of one lemon
  • 2 eggs
  • 2 2/3 c. flour
  • 1 1/2 tsp. baking powder
  • 1/4 tsp. baking soda
  • 3/4 tsp. salt
  • 1/4 tsp. fresh grated nutmeg
  • 1 c. eggnog

Glaze:

  • 2 Tbsp. butter
  • 3 Tbsp. eggnog
  • 1 tsp. vanilla
  • 1/2 tsp. rum extract
  • 1 1/2 c. powdered sugar

Instructions
 

Muffins:

  • Preheat oven to 400 degrees. In a mixing bowl, add butter, oil, sugar, brown sugar, vanilla, and rum extract. Cream together. Blend in eggs.
  • In another mixing bowl, add flour, baking powder, baking soda, salt, and nutmeg.
  • Measure eggnog. Add to creamed mixture alternately with dry ingredients. Mix just until combined.
  • Using standard muffin cups, line muffin pan and fill 2/3 full. If you don't have muffin cups, you can butter and flour the muffin pan.
  • Bake on middle rack of oven at 400 degrees for 15 to 18 minutes. Baking time will vary depending o your oven. Make the glaze while muffins bake. Test muffins for doneness with a toothpick. Remove from pan immediately to wire rack to cool.

Glaze:

  • In a small saucepan, melt butter. Add eggnog and flavorings to butter and warm. Add to powdered sugar and mix well.
  • Dip tops of muffins in glaze and allow excess to drip into bowl while the muffins are still warm. The glaze will firm up as it cools. It tastes like donut glaze! Happy Baking!
