Ingredients
  

  • 1 3/4 cups all-purpose flour
  • 1 1/2 cups sugar
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/4 cup flax meal
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1/3 cup buttermilk
  • 1 tsp. vanilla
  • 1 cup ripe bananas, mashed
  • 3/4 cup walnuts, chopped

Instructions
 

  • Preheat oven to 350 degrees. Line a standard muffin tin with 12 parchment tulip liners.
  • In a mixing bowl, combine the first 5 dry ingredients. Add eggs, oil, buttermilk, and vanilla. Stir slightly to combine. Add bananas and stir together. Fold in chopped walnuts. Stir just until ingredients are combined. Using a medium scoop (#10), fill 12 parchment tulip muffin liners. Bake at 350 degrees until a toothpick comes out clean, usually around 28 minutes. Baking time will differ depending on the oven. Remove from pans and allow to cool before serving.
    If you don't have the tulip liners, you can use standard baking cups. Reduce baking time to about 22 minutes. You'll get a few more muffins, about 20.

Notes

If you don't have parchment tulip liners, you can grease a standard muffin tin and fill each cup 2/3 full. You may have extra batter left to bake a few more muffins.
