I love using parchment tulip muffin liners for baking muffins and cupcakes. They’re easier to peel than standard cupcake liners, they don’t stick to the parchment, and they keep your muffins fresher longer. Also, the tulip liners allow for more batter, so you can get a taller muffin without the fear of the batter baking over the edge (12 muffins). If you use standard liners, you’ll get a few more muffins (around 20 muffins).
I like adding flax meal to this recipe. It’s optional. I like the nutty flavor of flax, and the additional walnuts added at the end boost the flavor too. Try toasting your walnuts, cool them, then chop. Do this step first when making this recipe. Be sure not to chop the nuts before toasting. Chopped nuts can burn easier in the oven, so toast them first, then chop.

My very first attempt at recording a recipe video how-to was using this recipe, Blue Ribbon Banana Muffins. I didn’t plan ahead too much, I just grabbed the ingredients, my tulip muffin liners and pan, and some bright colored handmade dish rags and striped kitchen towels for a little color. I didn’t have a camera stand yet, so I rigged up my own. A plastic barrel cookie jar with a clip board on top. I’m pretty sure some rubber bands and tape were involved. I decided after my first video that I would also record all the background music for future videos. I’ve learned a lot since then! Like how to lighten up a little when I’m explaining how to do something. That first video is pretty funny. I’m so serious! Hahaha… It’s been a process, and I’m still learning every day.

Blue Ribbon Banana Muffins

- 1 3/4 cups all-purpose flour
- 1 1/2 cups sugar
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/4 cup flax meal
- 2 eggs
- 1/2 cup vegetable oil
- 1/3 cup buttermilk
- 1 tsp. vanilla
- 1 cup ripe bananas, mashed
- 3/4 cup walnuts, chopped
Instructions
- Preheat oven to 350 degrees. Line a standard muffin tin with 12 parchment tulip liners.
- In a mixing bowl, combine the first 5 dry ingredients. Add eggs, oil, buttermilk, and vanilla. Stir slightly to combine. Add bananas and stir together. Fold in chopped walnuts. Stir just until ingredients are combined. Using a medium scoop (#10), fill 12 parchment tulip muffin liners. Bake at 350 degrees until a toothpick comes out clean, usually around 28 minutes. Baking time will differ depending on the oven. Remove from pans and allow to cool before serving. If you don't have the tulip liners, you can use standard baking cups. Reduce baking time to about 22 minutes. You'll get a few more muffins, about 20.
