A loaf of bread cooling in Mama’s kitchen on a Fall day,…piping hot rolls in the oven at Nanny’s house on a holiday,…and when I was little, around 7 years old, on Daddy’s first day of delivering bread, he brought the fully loaded truck by the house around 3:00am for us to experience. You could smell the fresh browned crust of buttered split top wheat bread, honey buns, and cinnamon rolls, and that started my obsession with breads of all kinds.

Have your butter and jam or favorite preserves ready for these as soon as they pop out of the oven! If you’ve never tried black currant preserves yet, you’ve gotta do it! I love Tiptree Black Currant. Apple butter with a pat of softened, salted butter is another favorite. Try making these rolls smaller (half size) for meatball sandwiches. Add some mozzarella cheeese and dip in marinara.
Make Ahead: You can bake the night before, cool, store in a food storage bag and reheat the next day. Place rolls in a foil pouch and heat in oven for a few minutes until warmed through.
This recipe is a good one to start with if you’re wanting to get into making yeast dough. It’s quick and easy, and never fails. Just make sure to allow your dough to rise enough. Tips for rising: If your kitchen is cold or drafty, try rising near a pot of boiling water. Or, turn your oven on for a minute to barely get warm, then turn it off. This will act as a proofer. Place your covered dough in the barely warm oven to rise. This will help the process go a little faster.

Easy No Knead Dinner Rolls
Ingredients
- 1 1/2 c. warm water
- 2 Tbsp. sugar
- 1 Tbsp. active dry yeast
- 1/2 stick melted butter (plus 3 more Tbsp. to brush on tops)
- 3 1/4 c. flour
- 1 tsp. salt (if using unsalted butter, use a heaping tsp. salt)
Instructions
- In a mixing bowl, add warm water, sugar, and yeast. Whisk together until combined well. Allow to rest, uncovered, for 5 minutes for yeast to bloom (will become foamy/frothy on top).
- Add melted butter, flour, and salt. Stir until all flour blends in. No kneading required! Cover the bowl. Let rise for 30 minutes in a warm, draft free area (such as near your oven or cooktop.) For extra help during rising, place a simmering pot of water nearby to create extra warmth.
- Transfer dough to a floured surface. Fold dough over itself 4 times, and create rough square. Divide dough into 15 equal pieces using a bench scraper or knife. Roll each piece into a tight ball and pinch to seal. (See video)
- Place dough balls in a 9x13 pan lined with parchment paper. If you don't have parchment paper, lightly grease your pan. If you don't have a 9x13 pan, you couls use a cookie sheet. Leave a little room between rolls to allow for rising. (See video)
- Brush tops of rolls with a generous amount of melted butter, cover loosely, and rise for an additional 30 to 40 minutes.
- Uncover, and bake in a preheated 375 degree oven for about 20-22 minutes, or until nice and brown. Baking times will vary depending on your oven.
