I had fun recreating this particular recipe. Who doesn’t love peanut butter and chocolate? When I heard the buzz about this Costco pie, I knew I had to get busy making one. I hope you love it!
Buttery Graham Cracker Crust. This crust is thick, so I used my Pyrex glass pie pan. It seems a tiny bit deeper than than my 9 inch aluminum pans. I baked the crust for a few minutes, but its not entirely necessary. If you want to skip browning the crust, that would be ok. Its delicious either way!
Creamy, dreamy peanut butter filling. My filling differs from other recipes. I use heavy whipping cream instead of cool whip in the filling. I also decided to thicken it up with white chocolate instant pudding mix. If you can’t find white chocolate pudding, you can use vanilla. Cream cheese, powdered sugar, vanilla, and the star of the show,…Peanut Butter! I used Jiff for this recipe. It seems to hold up well, especially for piping later on…
Light and creamy Chocolate Mousse. Pretty simple ingredients here. Melted chocolate, heavy cream, vanilla, and the rest of the pudding mix. Watch the how-to video for all the steps. Once you see how to make it, it will seem pretty easy to tackle.
The peanut butter cream border. Fit a piping bag with a star tip, fill with the reserved chilled peanut butter filling, and pipe a shell border around the edge of the pie. One last step that I missed: sprinkle a few graham cracker crumbs around the peanut butter shell border. Chill, slice, and devour your masterpiece!
I’ve been told that this pie freezes well. Every time I make it, I never have any left over to try freezing! I serve regular size pie slices (8 slices per pie) but you could definitely cut the pieces a little smaller. This is a rich pie. It tastes like a giant chilled peanut butter cup. Peanut Butter Chocolate Pie - My Version of the Viral Costco Pie!
Ingredients
Graham Crust:
- 2 c. graham cracker crumbs
- 3 Tbsp. sugar
- 1/4 tsp. salt (omit salt if using salted butter)
- 1 stick (4 oz.) unsalted butter, melted
Peanut Butter Layer:
- 8 oz cream cheese
- 1 1/2 tsp. vanilla
- 3/4 c. peanut butter
- 1 c. powdered sugar
- 1 c. heavy cream
- 5 Tbsp. instant white chocolate pudding mix
Chocolate Mousse Layer:
- 5.5 oz. semi-sweet chocolate chips (I used Ghirardelli, about a heaping 3/4 cup)
- 2 c. heavy cream
- 1 tsp. vanilla
- 3 Tbsp. instant white chocolate pudding mix
Instructions
For the crust:
- Combine graham crumbs, sugar, salt, and melted butter. Lightly spray a standard size 9 1/2 inch pie plate with nonstick spray. Press crust evenly into pan, building up an edge around the sides. Bake in preheated 350 degree oven for about 10 minutes. Cool completely.
For Peanut Butter Layer:
- Ina mixing bowl, beat together 1 8oz. block of cream cheese with vanilla. Mix in peanut butter. Add powdered sugar and mix together well. Add heavy cream. Beat until mixture thickens slightly, about 1 to 2 minutes. Scrape sides of bowl. Add 5 Tbsp. pudding mix, Beat 2 minutes.
- Spread half of peanut butter mixture into crust. Chill remaining half for piping around the edge of the pie later. Cover and chill.
Chocolate Mousse Layer:
- In a mixing bowl, add 5.5 oz. semi-sweet chocolate chips, about a heaping 3/4 cup. (I used Ghirardelli) Bring 1 cup of the heavy cream to a simmer and pour over chips. Add 1 tsp. vanilla. Rest 1 minute. Mix together well, until all chips are melted. Stir in remaining cup of cold heavy cream. Whisk together well. Cover and chill 2 hours.
- Beat until mixture begins to thicken. Add remaining 3 Tbsp. of instant white chocolate pudding mix. Beat for 2 minutes. Mixture will become thick and fluffy. Spread chocolate mousse evenly on top of peanut butter layer.
- With remaining chilled peanut butter cream, pipe a border around the edge of the pie using a star tip and piping bag. (See links for items used in this recipe.)
- Best chilled overnight, or for at least a few hours. Enjoy!
